10-MINUTE MICROWAVED RISSOTO IN A MUG
(Makes 4 Servings)

INGREDIENTS:
2 tbsp. butter ($2.29/8 oz; $0.29/recipe)
½ onion, finely chopped ($0.60/each; $0.30/recipe)
2 garlic cloves, minced ($0.60/each; $0.12/recipe)
1 cup arborio rice ($4.49/1 lb.; $2.25/recipe)
2 cups vegetable broth ($3.29/32 fl. oz; $1.65/recipe)
¼ cup bella mushrooms ($3.99/10 oz; $0.80/recipe)
¼ cup cubed butternut squash ($1.69/lb.; $0.60/recipe)
1 Tbsp. shredded parmesan ($1.99/6 oz.; $0.15/recipe)

DIRECTIONS:
1. Begin by adding ½ tablespoon of butter to each mug. Then, add a spoonful of onions.
Microwave for 1 ½ minutes on high, stirring after 30 seconds to distribute the melted butter.
2. Next, add a pinch of garlic, ¼ cup rice, and ½ cup of broth. Cover with loosely with plastic wrap
and heat in the microwave at 50% power level for 2 minutes. Remove and stir. Add additional broth if necessary. Repeat heating process.
3. Add your butternut squash and remaining broth. Cover again with plastic wrap and heat for another 2 minutes at 50%.
4. Heat on 50% power for another minute or until the rice is fully cooked. Then, add your parmesan and salt and pepper to taste.
